Ingredients
2 Roma tomatoes diced
1 teaspoon red wine vinegar
1 teaspoon olive oil
1/2 teaspoon Italian seasoning
1/4 cup fresh pesto
2 – 4 ounces each goat cheese logs

Steps
In a small bowl combine chopped Roma tomatoes, red wine vinegar, olive oil and Italian seasoning. Mix together and set aside.
On a medium size plate or platter, spread goat cheese into a flat circle. About 1/2-3/4″ depth is perfect. SEE Notes for a method.
Spoon pesto over goat cheese layer. Top with Roma tomato mixture.
