1 cup carrot (julienned (can buy matchstick carrots in produce section))
8 ounces grated sharp cheddar cheese ( (2 cups))
1/8 teaspoon nutmeg ((optional but brings out the flavor))
salt and pepper
Cuisine
American
Steps
Melt the 1/4 cup butter and sautee the 1/2 medium onion, chopped in the butter until soft. Sprinkle the 1/4 cup all-purpose flour over the mixture. Cook and stir over medium heat for 1-2 minutes.
Whisk in the 2 cups half-and-half cream and 2 cups low-sodium chicken stock or broth. Bring to a boil then reduce heat to medium.
Add the 1/2 lb broccoli and 1 cup carrot. Cook over medium-low heat for 20-25 minutes or until the broccoli and carrots are tender.
You can leave the soup chunky or blend about 1 cup of the soup and stir it in for a smoother soup (that's what I do). Remove from the heat and add the 8 ounces grated sharp cheddar cheese. Stir in the nutmeg if desired. Add salt and pepper to taste.
Serve with crusty bread.

Money Hungry on 2026-09-26 (1 stars): Absolutely ridiculous to have to give you my email address to be allowed to pring, especially after having scrolled past 1000 ads giving you revenue on those. I just wanted to print a recipe. Avoid
Mary S. on 2026-09-03 (5 stars): This recipe was simple and better than Panera(and I love that soup!). I added a tiny bit of garlic powder and used an immersion blender for a couple of seconds at the end. Will definitely be making this again soon!
Dodi on 2026-09-01 (5 stars): Amazing. Definitely deserving of all the reviews and high stars.
Mia on 2026-08-08 (5 stars): I love this recipe. I added about 1/2 tsp of parsley.
Betsy on 2026-08-06 (5 stars): Saw this recipe and decided to try it. It is one of the best soups I’ve ever had!! I used 32oz of heavy cream and 32 pm of chicken broth, (I used the list for the doubling of the recipe).
This soup will be in our soup rotation ♥️♥️♥️
Margaret on 2026-08-05 (5 stars): Absolutely perfect! My toddler loved it. I added a splash of buttermilk because I had some on hand. Thank you!
Diane Boop-Hollar on 2026-08-03 (5 stars): I enjoyed it! The soup is good in warm or cold weather.
Karen on 2026-08-02 (2 stars): I followed the recipe to the tee, but it came out like walpaper paste! Way way too thick. Even though I tried to thin it out before serving - it still was very pasty. Any suggestions as to what happened, as all the other reviews are raves. What did they do that I did not?
