Steps
Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Line two baking trays with baking or parchment paper.
In a large mixing bowl, add cold butter and sugar. Beat with an electric mixer on medium speed until combined. Add vanilla and egg. Beat again until combined – but try not to over mix.
Add flour, baking soda, ginger, cinnamon, nutmeg and salt and beat on a low speed until soft cookie dough forms. Add chocolate chips and beat briefly.
Scoop out cookie dough, roughly 2 tablespoons per cookie, and place on prepared oven trays, leaving room for the cookie to spread.
Bake cookies for 12-14 minutes or until golden brown. Sprinkle cookies with sea salt. Leave cookies to cool completely.

Josh on 2023-12-01 (5 stars): Absolutely loved these! My new favourite Christmas cookie.
Sarah on 2023-12-04 (5 stars): These are AMAZING! Just the perfect texture and balance of flavour. I made them gluten free and simply replaced the flour and added 1/4 teaspoon xanthan gum and they worked perfectly! Thank you Jess!
Tess on 2023-12-08 (5 stars): Jess these were utter perfection! Knowing your recipes are a sure thing, I knocked up a double batch and I am SO glad I did. Highly highly recommend this for any Christmas festivities
Elaine Robson on 2023-12-10 (5 stars): This is a lovely cookie. The only change I made was to reduce the amount of white chocolate chips, I added some chopped crystallized ginger to replace them. YUM!
S on 2023-12-10 (5 stars): Made these! Fab! Used less white choc chips & bit more ginger. That touch of sea salt after baking is perfect. My sister said ‘These are the best ginger cookies I’ve ever had’. New fav. (I put a small piece of bread in container w/ them, trick from grandma, to keep them alittle soft)
driveshusbandnuts on 2023-12-26 (5 stars): Outstanding cookies! Just made them for the first time, and they turned out great! Soft interior with chewy edges. Amazing flavor. Quick to make. Very excited to include these on my Christmas cookie trays. I yielded 16 cookies even though just 10 were expected. I thought I measured out 2 TBLS. scoops, but maybe I was a little short.
Martina on 2024-11-25 (5 stars): Bake them yesterday just to try. I put a little less ginger (2 tsp) and everyting else was by the recipe. They were excatly as on your pictures. Loved them. They were vig, crispy on edges and fudgy in the middle. I weighed every one to be 76gr and I had excatly 10 cookies. Now I wanna try the biscoff cookies.
Helen on 2024-12-01 (5 stars): You're recipes never fail. There are absolutely perfect christmas treat. So so easy and they are perfect. I may have snuck a few extra chocolate pieces in.
Letoya on 2024-12-04 (5 stars): These are amazing!! Made a triple batch today and chucked some dough in the freezer. My husband says they’re better than the copycat levian cookies, such a big call as they’re pretty hard to beat in the taste stakes! Easieast recipes too. Thanks for creating and sharing
Catherine Caldwell on 2024-12-24 (5 stars): Can’t believe I finally made a cookie that worked!! These are fantastic and worked perfectly to make two batches for Christmas gifts.
Can’t wait to try the other type cookies now :)
Rebecca on 2025-12-21 (5 stars): A very easy recipe to follow for delicious cookies! I drizzled mine with white chocolate as I have a sweet tooth.
I made 14 cookies of a normal size with 170° for 14 minutes.
Kylie on 2025-12-29 (5 stars): Almost as good as your Soft and Chewy Gingerbread cookies Jessica- a bit like choosing your favourite child ;)
