1 onion (diced)
1 jalapeño (seeded and finely diced)
4 cloves garlic (minced)
2 ½ tablespoons chili powder (divided, or to taste)
1 teaspoon cumin
1 green bell pepper (seeded and diced)
14.5 ounces crushed tomatoes (1 can)
19 ounces canned red kidney beans (drained and rinsed)
14.5 ounces canned diced tomatoes (with juices)
1 ½ cups beef broth
1 cup beer
1 tablespoon tomato paste
1 tablespoon brown sugar (optional)
salt and black pepper (to taste)

Combine ground beef and 1 ½ tablespoons chili powder.
In a large pot, brown ground beef, onion, jalapeno, and garlic. Drain any fat.
Add in remaining ingredients and bring to a boil. Reduce heat and simmer uncovered 45-60 minutes or until chili has reached desired thickness.
Top with cheddar cheese, green onions, cilantro or other favorite toppings.

Used better than buillion veggie p/o beef broth. sauted beef with onion jalapeño & garlic in stovetop pressure cooker. mixed broth with rest of ingredients except green bell pepper which was layered over beef. pressure cooked 20 minutes with natural release, fabulous!

A Weninger on 2026-06-02 (5 stars): While I hate when people adapt a recipe right away...I did have to make 2 slight changes...however I woukd say that the original recipe is fantastic! My changes were.. I only had and Orange bell pepper and I had a batch of homemade baked (navy) beans I needed to use up. I hadn't noticed that this recipe only had Kidney beans lol. silly me. I doubt they changed the flavor of the recipe though. The final thing, in case anyone has this question, I cook it in the Instant Pot, following the cooking instructions here. Final step was Pressure Cook 15 mins on high, Natural release. It turned out to be the exact amount taking it to the Max line! like it was meant to be. It was too hot here today to cook it on the stove lol.
