2 cups all-purpose flour
1 cup granulated sugar
1 ½ teaspoons baking soda
1 ½ teaspoons cinnamon
1 teaspoon salt
½ teaspoon pumpkin pie spice
2 ½ cups shredded carrot
3 eggs
¾ cup vegetable oil
¼ cup milk
1 teaspoon vanilla extract
¾ cup chopped walnuts

Preheat oven to 350˚F. Line a 9x5 loaf pan with parchment paper.
Whisk together dry ingredients in a medium bowl. Set aside.
Mix carrots, eggs, oil, milk, and vanilla in a large bowl.
Add the dry ingredients to the wet mixture. Fold in walnuts and mix just until combined.
Pour into prepared pan and bake for 55-65 minutes or until a toothpick comes out clean.

Feel a bit disappointed.
The carrot bread after over an hour of baking was still liquid (way beyond “moist”)
I think that ratio of wet to the dry ingredients was a mistake.
Or maybe the pan needs to be square? on the photo it’s a loaf pan actually, and so I used .
Also I think that it needs more spices, the amount of the pumpkin spice was too little

I thought having a cup of sugar in the recipe would make it too sweet, but it is the perfect amount of sweetness. I’ll definitely make this carrot loaf again.
