From the moment we walked in, we were shown a very warm welcome and advice on the pods on sale. Made it as directed and was incredibly bland so doubled all spices and then added many different things that go into Indian curries (curry, cardamom, cinnnamon, clove, more garlic, etc.) and finally got it tasting pretty good!

I adjusted the recipe a bit - doubled the quinoa, omitted the diced tomatoes, and added a LOT more of the seasonings than called for because my family likes big, bold flavors. This is a. Solid base recipe, though, and super easy. I tend to cook a lot of Asian and Asian-fusion recipes and this is a nice mix of East Asian and Southeast Asian flavors.

MomofMany on 2025-01-17 (5 stars): I had to take our 6 kiddos to choir practice this afternoon and I just knew that I would be too exhausted to make supper later, so I threw all the ingredients into my instant pot on slow cook and off we went. We came back home to the most amazing aromas ever. I didn’t measure the ingredients. I just eyeballed what would suit us especially our hollow legged teens. I filled our family size instant pot to max. It was delicious. It had texture, lovely strong flavours, gorgeous to look at, great scents and really creamy. Everyone except the two year old had seconds. I was heavy handed with the red chilli flakes but my family loved the heat. We sprinkled freshly grated parmiggiano reggiano on top and all I can say is WOW. This is firmly in the Friday night supper rotation. Absolute winner 🥇

The only alteration I make is to double the amount of quinoa. While I’m curious to try adding curry powder and maybe cumin, which im sure would be delicious in a different way, I’m hesitant to mess with a good thing! I have a pot simmering now and will probably add a little lime juice before serving this time. I don’t understand all of the mixed reviews complaining of lack of flavor and wateriness—that has never been my experience at all. In fact, I never leave reviews and felt compelled to defend this dish! I don’t know about you, but I’ll be eating it for dinner tonight and then for lunch all week.
