Recipe VIDEO above. Extra crispy on the outside, fluffy on the inside. They taste like French fries except they're buttery (and look more rustic! :) ) These will be your new favourite way with potatoes! Makes 12, depending on size of potatoes. Make as many as can fit on the tray once smashed, as long as they aren't touching.

Steps
Cook potatoes: Bring a pot of water to the boil, add 1 tbsp salt. Cook potatoes until soft - small ones should take around 20 to 25 minutes, medium ones might take 30 minutes. It's ok if the skin splits. Alternatively, steam or microwave them.
Preheat oven to 200°C/390°F (180°C fan).
Steam dry: Drain the potatoes and let them dry in the colander for 5 minutes or so.
Smash! Place on the tray then use a large fork or potato masher to squish them, keeping them in one piece. Thin = crisper. Thicker = fluffier insides. (Both good!) More nubbly surface = better crunch!
Steam dry again: Leave on the tray to steam dry for 5 minutes or so - makes them crispier!
Drizzle: Drizzle with butter, then olive oil. Sprinkle with salt and pepper.
Bake: Bake for 45 minutes (small potatoes) to 55 minutes (medium) or until deep golden and crispy. Do not flip!
Serve hot, sprinkled with parsley if desired.

Vee on 2026-03-14 (5 stars): Fantastic recipe and so quick and easy to make. I let these cool on a wire rack before I put them in the oven to let the steam fully escape. Didn’t need as long in the oven, about 20 mins. Amazing flavours and a keeper.
Dottie on 2026-03-11 (5 stars): DELICIOUS! no matter what potato I use.
Lynn on 2026-03-06 (4 stars): I really enjoyed these. My only complaint is every utensil I used to smash the potato caused the potatoes to stick to that utensil but we got through it. I also used parchment paper, drizzled oil on the paper then smashed the taters.
If yours did not crisp up let them bake longer. I turned up the heat to 420 for an additional 5-10 minutes, check them every so often to find that happy crispiness. That made a difference to me, these are already cooked so it won’t hurt to keep them going longer.
DIANA on 2026-02-24 (5 stars): These were just delicious! Maybe it's bc I used only little potatoes or variations in ovens, but it didn't need the full 45 mins. Would definitely make again.
Dermot Keating on 2026-02-04 (5 stars): Should the potatoes in this recipe be peeled?
JoeBKS on 2026-01-26 (5 stars): Perfection. I’ve made other recipes and they don’t get crispy. Yours did. Thanks. I hope Dozer is doing better. ❤️
Sheilla on 2026-01-24 (5 stars): I tried two recipes for smashed potatoes and yours was the best by far! Much crispier and not at all greasy like the other one.
Kate on 2026-01-18 (5 stars): Followed the recipe (almost) exactly and these potatoes are amazing! I added fresh ground black pepper after cooking, and also added some finely chopped fresh rosemary before serving. This recipe is going straight into my regular rotation.

Bel on 2025-12-28 (5 stars): I’m answering my own question as I have now tried and can confirm that boiling ahead of time and roasting 2 days later works!
Robin on 2025-12-01 (1 stars): Completely burnt potatoes, a waste of food and time and added stress having to scramble for a different starch.
Cath on 2025-11-26 (5 stars): By far the best version of smashed potatoes. I've tried a couple but this one. 10 stars
