Recipe video above. This is the faster way to make a chicken stew (casserole) that's done in an hour but tastes like it's been simmering all day! The trick is to use boneless thigh fillets, beef instead of chicken broth, a good slug of red wine and BACON!
Place oil and bacon in a large heavy based casserole pot over high heat.
When the oil is heated and bacon releases some fat, add chicken.
Sprinkle with salt and pepper and cook, until chicken and bacon is browned.
Add garlic and onion, cook 1 minute.
Add celery and carrot, cook 2 minutes.
Add red wine, allow to simmer rapidly 2 minutes until the winey alcohol smell is gone.
Add flour, mix until incorporated.
Slowly pour in half the beef broth while stirring, then pour the rest in.
Add tomato, Worcestershire, thyme, bay leaves, salt, pepper.
Stir, add potato.
Cover, simmer 30 minutes.
Remove lid, add mushrooms and green beans. Simmer without lid* for a further 10 minutes.
Serve with crusty bread, sprinkled with parsley if desired!

My house smells fantastic. Next time, I might skip the potatoes and serve it with rice or mashed potatoes, but, as written, it’s beautiful.

I could just have the broth and a plateful of fresh, crusty bread cut in thick doorstop slices!, slathered in proper butter, like kerrygold Irish butter. I use 1 kg chicken breasts, marinated overnight. Brown them whole with smoked diced pancetta from Aldi, I don't cook it all the way, then remove to a plate, set aside and continue. Have tweaked it extensively to use what I already had available. Used a can of Guinness ( no wine) or wine and no Guinness. Fresh bunches of thyme, dried Italian mixed herbs, smoked paprika, more garlic and onions, fresh chillies, more mushrooms, chantenaye carrots left whole, normal potatoes instead of new/baby potatoes. Concentrated beef stock. Every time I make it, I forget I need a bigger pan. I usually simmer with lid on for 30 mins or until veggies are almost cooked, then slice the chicken in junks and add it back to the pan with the bacon and juices on the plate, simmer with lid on for another 20 mins to finish off. I sometimes add some Caribbean style dumplings (spinners). Tastes even better the next day. Lovvvve it and all your other recipes. Have all your books. Love what you do! Dozer is a beautiful bonus!!
