Add all ingredients to a medium sized pot and bring to a boil.
Whisk over medium-high heat for a couple of minutes, until the gravy thickens.
Serve with mashed potatoes! This gravy keeps well for up to a week in the fridge. Just re-warm, add a little water if too thick, stir and serve.

Because I batch cook and freeze ingredients for the most part - I'm wondering if this freezes well. I'm guessing not but thought I'd ask. I love this gravy so much - I could eat it by the spoonful! For the vegetable broth I use McCormick vegan “Chicken Style” Vegetable Bouillon, and I will sometimes add a spoonful of toasted sesame oil if I want to make it extra rich. The addition of Dijon mustard is really inspired!
P.s. your tofu marinating and grilling recipes are also among my favourites - and my non-vegan family loves them too.

Made one with all your ingredients (didn't mention the onion powder!) but I made a roux - so added oil which does equal more calories - with the flour as it always improves the flavour.
