3 1/2 cups Rolled Oats
1/2 cup Unsweetened Coconut Flakes
1/2 cup Almonds or Hazelnuts (chopped)
1/4 cup Sunflower Seeds (or other seed such as Chia, Sesame or Pepitas)
1/2 cup Honey
1/3 cup Pure Maple Syrup
1/4 cup Fresh Squeezed Orange Juice (or pure OJ from the store)
1/3 cup Coconut Oil (melted)
2 teaspoons Pure Vanilla Extract
1 teaspoon Cinnamon
1/2 - 1 teaspoon Sea Salt
1 cup Dried Apricots (chopped)
1/2 cup Dried Cherries or Cranberries
* Pumpkin Pie spice is excellent in granola. Optional add 1 teaspoon

Steps
Preheat oven to 300 degrees.
Place oats, coconut, nuts, and seeds in large bowl. Pour in honey, maple syrup, orange juice, coconut oil, vanilla, cinnamon and salt and stir until all coated. Toss in dried apricots and cherries.
Pour on a lightly greased cookie sheet or covered with a Silpat or parchment paper.
Bake for 35 - 45 minutes, stirring every 15 minutes until lightly golden brown.
Place in glass jars or air-tight containers. Granola will last for weeks. You can also freeze it in plastic freezer bags.
Use it top Greek yogurt, acai bowls or just eat it all by itself as a snack.

I replace coconut oil with olive oil, and use pumpkin seeds in place of the coconut, but otherwise I make it just as your recipe. The pumpkin pie spice just adds a whole new amazing dimension to it! I love how this smells while it's baking, and it's gaining legendary status among our friends and family or all that I can't stop talking about it! I have it in the morning with 2% Greek yogurt, a tiny drizzle of honey and a handful of raspberries and it's just glorious. Thank you so much!
