Steps

  1. In a large skillet (3 quarts or larger), warm the oil over medium low heat. Add the onion and cook until translucent, about 3 minutes.
  2. Next add the chopped red bell pepper, spices and diced green chilies. Cook for another 3 minutes, continuing to stir intermittently.
  3. Lastly, add the black beans, corn, salsa and rice. Stir everything until well combined. Add salt, to taste, if desired.
  4. Turn the oven to broil then top the mixture in the skillet with the shredded cheese. Place the skillet in the oven and cook for about 3-4 minutes until the cheese is golden and bubbly on top. Serve warm with desired toppings and enjoy!
