In a small mixing bowl, combine the brown sugar, melted butter, cinnamon, and vanilla. Mix well, then spread evenly in a greased 15x10x1 inch baking pan. Set aside.
In a shallow pan (I used 9x13 inch) combine the eggs and milk. Whisk well, then add the bread and soak for 1-2 minutes, flipping once.
Place the bread over the brown sugar mixture. Bake, uncovered, at 350°F for 25-30 minutes or until golden brown.
Serve brown sugar side up. Dust with powdered sugar and top with fresh fruit as desired.

Buttered the sheet pan, mixed cinnamon & brown sugar together in a small bowl so the cinnamon would mix evenly into the egg/milk custard and added it to the eggs/milk. Dipped each slice into eggs on both sides, placed into pan for bake. Only used 1 T. brown sugar as I had put 1 T. turbinado sugar into the custard already (I'm a "wing it" baker sometimes) and we prefer less sweet. 2/3 into bake, brushed bread with melted butter, flipped & baked for another 2-3 minutes. Delicious! a beautifully set custard, complemented the croissant bread so well. Thank you for sharing a simple, yet fancy, breakfast/brunch option.

I did flip all the finished pieces over once I took it out of the oven as I could see if I allowed to get to room temp the toast would stick to the pan because the topping hardened.
