Ingredients: 1 large head Savoy cabbage, frozen 2 carrots, peeled and cut into 2-inch chunks 2 celery ribs, cut into 2-inch chunks 1 medium-sized onion, roughly chopped 3 tbsp extra virgin olive oil 1¼ lb ground beef 1 tsp kosher salt ½ tsp ground pepper ½ tsp ground nutmeg 2 tbsp of tomato paste ¼ cup sweet vermouth or red wine ⅓ cup of cream 1½ cup grated Parmigiano Reggiano 2 eggs, whisked Butter for greasing Remove the frozen cabbage from the freezer. Place in a bowl and cover with a damp hot towel. Let it sit until the cabbage has thawed. Preheat oven to 400F Once thawed, peel the leaves from the head and remove just the very thickest part of the veins from each leaf. Pat the leaves dry and set aside. To make the meat sauce, finely mince carrots, celery, and onion either by hand or by using a food processor. Add olive oil to a large skillet (mine was 11-inch round) and heat over medium-low heat. Once the oil is warm, add the minced veggies and cook for about 4 minutes or until the veggies are tender. Next, add the ground beef. Use a spatula to break the meat apart into very small pieces while it cooks. Once the meat is fully cooked, add salt, pepper, nutmeg (do not skip the nutmeg), and tomato paste. Mix to combine the tomato paste, then add the sweet vermouth or red wine. Continue to cook until the alcohol burns off, about 3 minutes. Lower the heat, stir in the cream, cook for 2 more minutes, then remove from the heat and let cool to room temperature. Once the meat has cooled, mix in the eggs. Grease a _by _ baking dish with butter. Add the first layer of cabbage leaves, followed by ⅓ of the meat sauce and ½ cup of grated parm. Continue until you have used all of the meat sauce and cheese. Be sure to finish with a layer of grated parm. Bake for 15 minutes, then increase the temperature to broil and cook for 2 minutes more. Serve warm. #lowcarb #easyrecipe #highprotein".
