RECIPE: 405g (3 1/4 cup) all purpose flour 8g (2 tsp) baking powder 3g (1/2 tsp) salt 6g (1 tsp) baking soda 4g (1/2 tsp) cornstarch 227g (2 sticks) cold butter 200g (1 cup) brown sugar 120g (3/4 cup) white sugar 2 egg yolks 1 whole egg 1 tsp vanilla 1/2 tsp lemon extract zest of 2 lemons 12 oz white chocolate chips Mix your sugars with the lemon zest till fragrant. Add your cold cubed butter and mix till just smooth, don’t cream! Add eggs, vanilla and lemon extract. Mix till combined. Combine dry ingredients. Add dry ingredients to wet mixing till just barely combined. Add white chocolate chips. Portion into 6oz balls (will make 8) and freeze overnight. Bake at 350F for 16-20 minutes till golden brown on the outside.
