MAKES 2 Ingredients - *Candied pistachios* 1/2 tsp cinnamon 1/2 tsp vanilla extract 1/2 cup of caster sugar 30 ml water 30g shelled plain pistachios *French toast* Whole loaf of brioche 150ml milk 2 eggs 1 tsp vanilla extract 1 tsp cinnamon 50g (or as much as you want) of pistachio spread. Handful of raspberries. Method - Mix all the ingredients for the candied pistachios (excluding the nuts) in a pan on place on a medium heat to dissolve the sugar. While that’s on the hob, combine all the ingredients for the French toast (excluding the bread) and whisk until a delicious liquid. Take the brioche loaf and cut 2-3 inch slices. Once cut, dig out a “well” in the middle of the slices. Place the slices of bread in the egg based mixture and turn over repeatedly for 2 mins to allow the bread to absorb the mixture fully. While the breads absorbing the eggy mixture add the pistachios to the pan with the melted sugar mix and turn to coat all the nuts. Once fully coated spread the nuts onto some baking paper to cool down. Heat a pan on medium heat. Pick up the bread allowing any excess excess to drip off before placing into the pan. Keep turning the bread until all the sides are brown and you can see the bottom of the well has browned too. Place the pistachio spread in a microwave proof dish and put into microwave for 1 minute, checking on it to make sure it’s melted to a sauce. Chop the cooled nuts into smaller pieces and plate… Place the cooked bread in the middle of the plate, pour over the pistachio sauce then sprinkle the chopped nuts. Throw on raspberries to pair perfectly and devour!".
