And while I usually chuck them in my smoothies most mornings, I spotted @themindfulcook.co.uk sharing a chia pudding recipe and thought, yep, I need to try that! Here’s what the recipe said to use: 20g jumbo oats, 30g chia seeds, 125g 2% cottage cheese, 150ml almond milk (my go-to), 150g 0% Greek yoghurt, 1 tbsp maple syrup, 2 tbsp cacao powder, and 50g raspberries. Quick note: I didn’t have any Greek yoghurt so I just put extra almond milk in, it worked a treat. I also tossed in a handful of blueberries and blitzed them through for a bit of extra flavour, then stirred the raspberries in at the end for some texture. Pop it in the fridge overnight and boom, breakfast is ready for the whole week. Each jar comes in at around 30g of protein, 9g of fibre, low cal, and perfect if you're keeping an eye on blood sugars (which I 100% am).
