To make the whiskey pepper sauce- Ingredients 2 tbsp @dromonamakesit it butter 2 shallots finely chopped / diced 2 tablespoons of cracked black peppercorns 1 clove of garlic finely chopped 250ml of beef stock 300ml of cream. 50-75ml of whiskey (or brandy) Gently heat the butter in a pan, then add the garlic & shallots and cook until softened. Then add the crushed peppercorns. Combine the ingredients and add the whiskey. Cook for a minute to allow some of the alcohol to disperse then add the stock. Simmer until the mixture reduces by half. Once reduced add the cream and combine & allow to thicken. Taste & adjust with more pepper if required. For the chicken - Flatten out the breasts & flour the breasts before dredging in egg mix Combine - Breadcrumbs with 1 Tbsp garlic granules 1 Tbsp salt flakes 1 Tbsp black pepper 1 Tbsp Oregano Coat the chicken then carefully add to the hot oil 180°c cook until golden & the internal temperature reads 75°c For the onions - Slice into thin rings Brine the onions in some milk for 20mins Add 2 Tbsp of cayenne & 1 tsp salt to 1 cup of flour Remove and shake off excess milk then add to flour mix. Coat the onions then fry until golden For the creamy cheddar mash- Boil potatoes until fork tender Pass through ricer or masher Add 100g melted @dromonamakesit butter Add 100ml of double cream Add 100g of grated @dromonamakesit cheddar Mash, mix & combine until smooth or desired consistency.
