Knead with your stand mixer or by hand until dough ball forms. You may need to add more water or flour a little at a time if the dough is sticking to the sides. Place dough in an oiled bowl and cover for about 90 minutes or until doubled in sized. Roll your dough to bagels on a parchment lined baking sheet. Cover with a towel and bring a large pot of water and 2 TBSP baking soda to a rolling boil. And preheat oven to 425°. Place bagels into boiling water for a minute a side and return to baking sheet. Cover with an egg wash and toppings of choice then bake for 18-22 minutes!".
