455 likes, 14 comments - dinnerwithjulie on June 14, 2026: "Big Breakfast Cookies! 1 cup butter, softened 1 cup packed brown sugar 2 large eggs 2 tsp vanilla 2 cups all-purpose flour (or half all-purpose, half whole wheat) 2 cups old-fashioned or quick oats 1/3 cup oat bran (optional) 1 tsp baking powder 1 tsp baking soda 1/2 tsp fine salt 1 cup chopped dark chocolate or chocolate chips 1/2-1 cup chopped, sliced or slivered almonds, walnuts or pecans (or a combo) 1/4-1/2 cup sunflower, sesame and/or pumpkin seeds Preheat the oven to 350°F. In a large bowl, beat the butter and brown sugar for a minute or two, until pale and light. Beat in the eggs and vanilla. In another bowl, stir together the flour, oats, oat bran, baking powder, baking soda and salt; add to the butter mixture along with the chocolate, nuts and seeds and stir just until combined. Drop large spoonfuls or scoops (aim for about 1/3 cup each) onto a parchment-lined baking sheet. Flatten each cookie a bit with dampened fingers into patties about 1/2-inch thick and bake for about 18 minutes, until set and pale golden around the edges but still soft in the middle. Transfer to a wire rack to cool. Makes about 1 dozen substantial cookies".
