

24 likes, 1 comments - nourish.bymia on March 27, 2026: "English Muffin Recipe: Ingredients: ¾ cup milk (180ml) ½ cup water (120ml) 2 tablespoons granulated sugar 1 packet (10g) active dry yeast 3 cups cake wheat flour (360g) 1 teaspoon salt 3 tablespoons butter melted and cooled slightly (42g) 1 large egg room temperature Cornmeal/ polenta for dusting. Method: 1. Combine the milk, water, and sugar in a microwave safe bowl. Stir together and warm in the microwave for about 15 minutes. Add the yeast and stir once more. Set aside for 5-7 minutes. 2. Combine the flour and salt in the bowl. 3. Mix the egg and melted butter into the milk mixture then pour the liquid into your flour mixture. Mix the with a spatula and knead on a floured surface for 15 mins. 4. Transfer to a large, oiled bowl and cover with a clean damp tea towel. 5. Allow to double in size in a warm spot (about an hour). I placed mine in the oven and switched the oven on for 5 mins on the lowest temp setting, and then switched it off again. Make sure your tea towel stays damp, otherwise your dough will dry out. 6. Transfer the dough to a floured counter, lightly flour the top, then gently spread out and pat down to about 1cm thick. 7. Use a round cutter to cut your muffins, then gently transfer them to large containers and put the lid on. (Dust each container’s surface with polenta to prevent the dough from sticking to the container.) 8. Place in a warm spot to rise for about 30 minutes. 9. Place a large skillet over medium heat. Sprinkle the surface with cornmeal/ polenta, then carefully place 3 muffins on the pan. Cook for 6 to 8 minutes, until each piece is browned on the bottom and appears dry on top. (Adjust the heat to low, if the muffins are browning too quickly before the tops have dried out.) 10. Flip and cook for another 6 to 8 minutes, until browned on the other side. Few 😪 I can understand why we do not cook from scratch that often. But it was totally worth it!".
