While researching the original film, I discovered that the iconic “egg” from the early poster concept was actually based on a chicken’s egg, before evolving into the now-famous ovomorph. As a huge fan of the film, this ended up being one of my favourite dishes I’ve ever created in the competition. For the dish itself, I started by tempering white chocolate with green cocoa butter to create the signature line inside polycarbonate egg moulds. I then followed with dark chocolate, coloured with black cocoa butter, to achieve a deep, glossy shell. Once set, the shells were lined with feuilletine for a delicate crunch before being filled with a salted pistachio cream made from white chocolate and pistachio paste. Inside the egg sits a second, smaller egg: one half sour cherry mousse, the other a pistachio frangipane. This is enclosed within the shell, then finished with dried sour cherries and caramelised pistachios. To complete it, the top half of the shell is gently melted and sealed - creating the final “egg.” Probably my favourite dessert I’ve made on the show. This wouldn’t have been possible if it wasn’t for my brother in law @jackestorey of @storeyprojects knocking up those incredible boxes 😍 On that note Jack created basically a false bottom in the boxes allowing me to have dry ice hidden underneath, which I activated with a warm cherry tea, creating the famous mist that surrounded the egg in the poster and in the film.
