In 1810, El Grito de Dolores marked the start of the fight for independence from Spain, and every year plazas fill with fireworks, music, and food to celebrate. One of the most traditional dishes of the season is Chiles en Nogada: roasted poblanos stuffed with a sweet-savory picadillo of pork, fruit, and nuts, blanketed in creamy walnut sauce, then sprinkled with parsley and pomegranate seeds—the Mexican flag on a plate. This patriotic dish has been shared in Puebla since the 1800s and is now one of the most beloved foods of Independence Day.
