I first read my Nephew Ethan’s book as he’s the kind of young person to always come to you with a book with the hope you’ll read it to him, which I always will! Unfortunately for Ethans me and his other Uncle @storeyprojects actually dismantled his book and re bound it for the presentation on @greatbritishmenu - I still owe him a new one! Which I feel terrible about!! I loved developing this. It’s a fairly simple sponge cake made with lemon verbena sugar and layered with butter icing. Instead of the classic jam centre I decided to do a strawberry sorbet flavoured with apple marigold which has an incredible floral note. Fruit cells of raspberry and blackberry and some verbena and marigold cress. All in all this is was simple but I think I delivered on the image that I saw in the book, which if you’ve read, is an important part of the moles story.
