6,356 likes, 177 comments - kardeabrown on October 12, 2020: "#DeliciousMissBrown Mediterranean Inspired Lemon Garlic Chicken Ingredients ½ cup olive oil 2 tablespoons fresh lemon juice 2 teaspoons garlic powder 2 teaspoon kosher salt Fresh ground black pepper 1 (3-1/2 to 4 pound) whole chicken, cut in half with backbone removed (ask the meat department to do this for you) Sauce: 2 Tablespoons olive oil 4 Tablespoons unsalted butter 1 1/2 teaspoons minced garlic The juice of 2 lemons 1/4 cup reserved chicken drippings 1/2 teaspoon fresh lemon zest 1/3 cup minced garlic (5 to 6 gloves of garlic) Kosher salt to taste Pepper to taste 1 teaspoon oregano 1 stalk scallion diced down to stem Pinch of sugar or 1 teaspoon of honey Garnish: 1 stalk scallion diced down to stem Diced pimentos (optional for color, you can also use green olives) Chopped fresh parsley Lemon slices (optional) Directions Whisk together, garlic powder, salt, pepper, lemon juice and olive oil. Put each split chicken in a re-sealable plastic bag; divide marinade evenly between bags. Seal bags, removing as much air as possible and massage marinade around chicken to coat evenly. Refrigerate for at least one hour or overnight. Preheat oven to 400 degrees. Remove chicken from marinade.Transfer to a baking sheet or roasting pan, skin side up. Pour some of the marinade over the chicken. Sprinkle chicken with salt and pepper. Roast until chicken is browned, meat is cooked through and juices run clear (an instant reading thermometer when inserted in the meat should read 165 degrees F.) for about 45 minutes to an hour.( I like to baste in between. Also, if your chicken begins to brown too quickly loosely cover with foil) Remove from oven and rest for 15 minutes. Reserve drippings (remove any fat) Prepare sauce. Heat a sauce pan to medium high. Melt butter then add remaining ingredients. Stir then slowly whisk in reserved chicken drippings, bring to a slight boil. Turn heat down to low and taste. If needed season with a little more salt, pepper, and if too tangy add a pinch more sugar. Pour sauce over chicken. Garnish then serve! Pairs well with rice šŸ˜„".
