Ingredients: 1 onion, 1 large carrot, 1 celery stalk, 2 tbsp olive oil, 2 garlic cloves, 450 g ground beef, 1 sausage, casing removed, 125 ml red wine, 1 can whole plum tomatoes, 1/2 cup beef broth, handful thyme, 1 bay leaf and a handful of grated parmesan. Prep: make the ragu by cooking the onions, carrot, celery for 5mins. Season, add the garlic cook for 1 more min. Set aside. Cook the meat until golden. Deglaze with wine and let it reduce by half. Add the tomatoes, broth, thyme and bay leave and bring to boil. Cover & simmer for 45mins-1h. Cook your pasta, add the ragu, top it up with some grated parmesan and bake it for 15-20mins until brown.
