Find this recipe and more meal prep ideas in my Nutrition Guide (link in bio) INGREDIENTS 1/4 cup oats 1/4 cup almonds 1/4 cup walnuts 2 Tbsp pumpkin seeds 2 Tbsp sunflower seeds 1 Tbsp ground flaxseed 1 Tbsp hemp hearts 1 scoop protein powder (I suggest unflavored or vanilla!) 1 Tbsp natural peanut or almond butter 1 Tbsp water 2 Tbsp maple syrup 1⁄4 tsp cinnamon 1⁄4 tsp salt 1/4 tsp vanilla extract 2 Tbsp coconut oil, melted DIRECTIONS 1. Preheat oven to 300F 2. Pulse the almonds, walnuts and pecans in a food processor (or roughly chop with a knife) into small pieces. 3. In a bowl combine the nut mixture with the remaining ingredients and stir until well combined. You will want a sticky consistency, if the mixture is too dry add another tbsp of water as needed. 4. Line a baking sheet with parchment paper and transfer the mixture onto the sheet. Spread out with your hands or a spatula to create an even a flat surface 5. Bake for 25-30 minutes, turning half-way, until the mixture is slightly browned. 6. Remove from the oven and let cool. Once the granola is cool crumble it into small pieces. Store in an airtight container on the counter or in the fridge. 7. Serve as a snack on its own, with milk or layer with greek yogurt. Enjoy!".
