4 cod fillets
sea salt and black pepper
4 slices thick-cut bacon, chopped
1 tablespoon olive oil
4 tablespoons salted butter
1 tablespoon chopped fresh thyme
1 tablespoon chopped garlic
chili flakes
3/4 cup dry white wine
1/2 cup whole milk or heavy cream
1/2 cup grated Parmesan cheese
1 bag frozen spinach, thawed and squeezed dry
fresh basil or thyme, for serving

1. Pat the cod dry and season with salt and pepper.2. In a large skillet over medium-high heat, cook the bacon until crisp. Transfer to a paper towel-lined plate.3. Add the olive oil and butter to the skillet. Once melted, sear the cod until golden, 4 to 5 minutes per side. Transfer to a plate.4. Reduce the heat to medium-low. Add the garlic, thyme, and chili flakes. Pour in the wine and simmer 2 to 3 minutes, until reduced.5. Stir in the milk and whisk in the Parmesan until creamy. Add the spinach and cod to the skillet and spoon the sauce over top. Remove from the heat and top with the bacon. Serve with fresh basil or thyme and flaky sea salt.

I put it over a bed of orzo and added a bit of Parmesan to thicken up the sauce but it really didn’t need to be. I just ate the leftovers for lunch and it was just as good. Highly recommend!
Vanessa Wood Braband on 2026-06-27 (5 stars): This was delicious. I even forgot to thaw the frozen spinach and drain water and it still worked out great. We did include some starch as perm some of the reviews suggested it did not become creamy (just flour). It was delicious cold as left overs also.

Leah on 2026-06-10 (1 stars): Oh gosh where to start. I don't ever leave reviews but feel the need to for this recipe. First the sauce is so heavy and thick it just over powers and ruins the cod. It reminded me of a hot spinach dip app vs a sauce for fish. I did not have white wine, but had white grape juice and substituted that per the recipe, do not do this. Such a weird flavor to mix with the cream and parmesan cheese. I feel like this recipe was made for chicken and the cod was just subbed in to make it a fish dish.
