2 cups frozen blueberries
¾ cup granulated sugar
1 cup water
1 tablespoon fresh lemon juice
1 tablespoon cornstarch

Add the frozen blueberries, sugar, and water to a medium saucepan. Stir to combine. Bring to a boil and then reduce to a simmer.
Stir well and simmer for 10 minutes, stirring often to prevent burning.
In a small bowl, use a fork to whisk the lemon juice into the cornstarch until dissolved. Stir into the saucepan and continue cooking for 30 seconds to a minute longer, or until the syrup is thickened.
Remove from the heat and allow to cool for 5 minutes. Pour the mixture through a fine mesh sieve into a glass bowl, gently pressing on the berries to extract the syrup (but don’t pulverize them). Serve your Blueberry Syrup warm or cool.
Allow to cool completely before transferring leftovers to a jar or airtight container. Store in the refrigerator for up to 10 days or in the freezer for up to two months (transfer to the fridge to thaw overnight before using).
