You asked for my take on Viral Japanese Cheesecake, so here it is! Of course, you know I like to make everything from scratch when possible, but this recipe is delicious whether you make everything homemade or use some shortcuts. My version is tiramisu-inspired and a cross between the original recipe of just yogurt, and the more decadent versions with cheesecake filling and lots of toppings. Let me know if you try this one!
Viral Japanese Cheesecake
Ingredients:
1 ½ cups thick yogurt (such as Greek yogurt)
½ cup mascarpone cheese
4 tbsp maple syrup*
2 tbsp coffee, cold or room temperature
½ tsp vanilla paste or extract
1 sleeve speculoos cookies, homemade or store bought (you know the brand 😊)
1 cup hot coffee
Cocoa powder, for dusting
Instructions:
In a medium bowl, add yogurt, mascarpone cheese, maple syrup, 2 tbsp coffee, and vanilla. Stir until completely combined. Add the yogurt mixture to your bowl or container of choice, using a spoon or spatula to create a flat, even top.
Dip the cookies into the cup of hot coffee. Insert the cookies vertically into the yogurt mixture until fully submerged, evenly spacing them apart. Generously dust the top with cocoa powder. Chill for at least 6 hours, or overnight for better results.

*Notes: For this recipe I made homemade yogurt and cookies which had a less sweet result than storebought cookies. I added the maple syrup to make up for it, but if you are using storebought ingredients or flavored yogurt, you may not need it. | Turkuaz Kitchen
