đź’ĄONE PAN MEDITERRANEAN CHUCK ROAST 

If you’ve tried my other chuck roast recipes, you know how much I love them! I’ve lost over 140lbs & protein like this is an absolute game changer for staying on track. This takes just 10 mins to prep and the oven does all the work in just one pot. I use the beef for multiple recipes like this high protein beef, veggie & rice bowl with my @kaizenfoodco high protein low carb rice, or tacos, stuffed peppers, and even soups.

Here is how to make it:

1.Preheat oven to 350F.

2.Grab 2.5lb chuck roast and season both sides of beef with a few generous pinches salt, pepper, 1.5 tbsp sweet paprika, 1.5 tbsp thyme or oregano, 1/2 tsp cayenne pepper. Rub this on all sides. Then place it at the bottom of an oven safe dish with a lid.

3. Add 5-6 garlic cloves and 6 finely diced sun-dried tomatoes (I use the ones marinated in olive oil).

4.Pour 3/4 cup bone broth and 1/2 cup tomato sauce.

5.Cover the pot/dish and place in the oven at 350F for 3hrs. If your meat is more than 2.5lbs, I go always go about 1 hour per pound + an additional 1 hour. So if it’s 3 lbs go for 4 hrs, etc.

6.After 3 hrs, take it out of the oven, shred using two forks, mix well with the drippings, then put back in the oven at 425F for 40-45 mins.  At this point, I like to add a root vegetable like carrots, sweet potatoes or you can even use parsnips if you want a low carb recipe. I just diced up sweet potato and added it in with the shredded beef, then put it back in the oven for the last 45 mins.

7.Grab some sauce or make your own. Just mix 3 tbsp mayo with 1 tbsp tomato paste, 1 minced garlic clove, the zest and juice of 1 small lemon, and a pinch of salt.

8.I made a simple high protein plate with my high protein Kaizen rice, some sweet ptaotos, and some of the shredded beef. Topped with some fresh chopped parsley, a tablespoon of sauce, and it was SO good.
