Here’s the only recipe for Hot X Buns you’ll ever need! My recipe never fails, they’re so so fluffy and full of flavour. Make them this long weekend 🥰💃🏼🌸
1 ½ cups warmed milk 
2 tablespoons brown sugar 
1 ½ tablespoons yeast
 
4 ½ cups high grade flour 
1 tablespoons brown sugar 
3 tablespoons cinnamon 
3 tablespoons mixed spice 
1 teaspoon cardamom 
1 teaspoon nutmeg
1 teaspoon salt 

2 large eggs, lightly beaten
100g butter, softened or melted
 
1 cup sultanas
1 cup currants 
¼ cup fresh orange + lemon peel, chopped 

1.  Dissolve sugar in warm milk then sprinkle on the yeast and stir gently. Cover and leave for 10-15 minutes until really frothy. 
2.  In a big bowl, mix flour, sugar, spices, salt and then pour in the frothy yeast mix and knead with a dough hook in a mixer on low for about 5 minutes or by hand using a butter knife.  Mix until you have a scraggy lump. It is very sticky at this stage so if doing by hand I don’t recommend turning out on a bench as it gets too messy, just keep on moving it around the bowl with the knife or a well-floured hand. You will be tempted to keep adding flour. Don’t. 
3. Add in the lightly beaten eggs & butter and mix until dough is shiny. 
4.Add dried fruit and peel and keep kneading either in the mixer or by hand on a lightly floured bench for 5-10 minutes. Wipe/scrape the bowl clean, oil it and return the dough to the bowl. Cover with plastic or a damp tea towel. Leave somewhere warm to rise until doubled in size - 1.5-2 hours. 
5. Turn out risen dough and divide into 4 , then each 1/4 into 4-5 pieces to shape into buns. Place buns in lined tray and leave to rise again until doubled - 45mins or so. 
6. Make the glaze & paste for crosses. 
7. Add crosses and bake 180 C for 25-30 mins. Glaze straight from oven. 
8. Slather in butter and eat! 

Crosses
4 tablespoons plain flour 
1 tsp sugar 
Splash of water 
 Mix together to form a thick paste. Put in piping bag or zip lock bag with corner snipped out to apply crosses to buns. 
 
Glaze
4 tablespoons sugar 
2 tablespoons boiling water
1 teaspoon orange zest
