IRISH SODA BREAD
3 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon table salt
1 1/2 - 1 3/4 cups buttermilk
Lets make it-
Preheat oven to 450F. Sprinkle a baking sheet with a bit of flour. Set aside.
To a bowl add the flour, soda, salt. Sift once. Make a well in the center of the bowl and add the buttermilk. In a circular motion, mix till just combined. If too dry to come together, add 1 Tablespoon of buttermilk at a time to make a cohesive dough. Gather your dough and move to a slightly floured board. Pat into a mound that is 6 1/2 inches across and 1 1/2 inches tall. Turn both sides into the flour and transfer to the prepared pan.
Bake for 15 minutes at 450F. Lower the heat to 400 and bake an additional 15 minutes or until the bread sounds hollow. Remove from oven and let completely cool on the sheet. Slice and serve with your favorite Irish butter and jam of your choice. Store the leftovers completely covered at room temp.
Optional ingredient: Add 3 ounces of raisins with the dry ingredients. Continue with recipe as written. | The Farm Stand
