Save my recipe for Creamy Tomato Basil Soup! Shay is a picky eater and never had tomato soup before and one day she requested it because she saw it on tiktok. So I literally jumped at the chance that she was willing to try something new. She only eats a handful of foods so I took extra time to make sure that the creamy tomato basil soup was really good. It made me so happy to see her take her first bite and finish the whole bowl soup. It was a big win for me! The ingredients are two pounds of tomatoes, 1 bulb of garlic, 2 shallots, 1 small onion, 2 tbsp olive oil, 1/2 tsp salt, 1/2 tsp black pepper and 1 tsp dried oregano. I baked everything in the oven at 375F degrees for 25-30 minutes. Remove from the oven and cool for 15 minutes. Pour everything into a blender, squeeze the garlic cloves out and add 1 tsp olive oil and 2 1/2 cups of vegetable stock, basil and salt. Blend until smooth.
