This is my sisters recipe, modified by me as I'm gluten-intolerant. After trialling different gluten-free flours, I have found using Well & Good gluten-free self-raising flour - a blended flour available from health food stores and supermarkets - gives me consistently good results. That's handy, as I have a bumper crop of ginger this year.
Super Moist Ginger Cake Recipe
Ingredients
125 g butter
250 ml golden syrup
250 g Well & Good gluten-free self-raising flour blend
150 g fresh, minced ginger
0.5 tsp cinnamon
0.5 tsp cardamom
0.5 tsp nutmeg
200g raw sugar
2 eggs
Have some milk or almond milk to hand, just in case
Method
Grease two small loaf tins, approximately 23cm x 12cm;
Warm an oven to 180C;
In a mixing bowl, add the dry ingredients: flour, spices and sugar, then mix thoroughly;
In another mixing bowl, melt the butter and warm the syrup. Blend them together;
Gradually add the eggs, one at a time, gently whisking them before mixing in thoroughly;
Mix in the ginger;
Gradually add the dry ingredients to the wet ingredients, a bit at a time, stirring thoroughly until you create a batter;
The finished batter should have a soft, dropping consistently rather like a thick custard;
If you substitute powdered ginger for fresh ginger (which radically reduces the flavour) you may need to add a dash of milk or almond milk to achieve the soft, dropping consistency;
Pour half the batter into each tin and place them in the centre of the oven;
Cook for about 50 minutes. Check the mix has firmed by pushing a knife into the cake. If the knife comes out clean, turn off the heat. If the knife comes out with mixture adhering to the knife, lower the oven temperature to 160C and give it another ten minutes cooking time;
Remove tins from the oven, allow the cakes to cool - once cooled they are easily removed.
Using fresh ginger makes a pretty delicious cake, so try not the eat them in one go!
