Preheat the oven to 400 degrees F. Coat a sheet pan with cooking spray.
Place the olive oil, butter, garlic, salt, pepper and thyme in a large bowl. Whisk to combine.
Add the carrots and potatoes to the bowl and toss to coat.
Pour the vegetables onto the sheet pan and spread into a single layer.
Cook for 30-40 minutes or until potatoes and carrots are tender.
Sprinkle with parsley, then serve immediately.

Whoa! I like to use baby carrots (just our preference) but I always use the red white and blue baby potatoes. I might have to find the rainbow carrots so I can use those next time! We eat this when I make a chuck roast; I make the roast and then do the veggies while the roast rests (I do it in the oven). Such a tasty meal!

I'm not crazy about a lot of garlic taste so didn't use quite so much, and it was so good. I didn't need to eat anything else. I added a side of applesauce, with was excellent.
