In a medium bowl, combine Kodiak mix, milk, egg, banana (if using), cinnamon and cardamom. U
A note about the milk. Start with 3/4 cup and if you want the batter thinner, add another 1/4 milk. The thinner the batter the lighter the pancakes will be.
Whisk until ingredients are just combined. You want the batter to be smooth, and once it is, stop whisking.
Heat a griddle over medium heat, and melt butter. I like to add about 1-2 tablespoons per batch. Using a generous amount of butter is what creates crispy edges that are absolutely delicious!
Ladle batter on the skillet in whatever size pancakes you like. Cook until bubbles form on the top, then flip and cook a couple more minutes on the other side. You'll notice both sides get lovely and golden brown.
Serve immediately with warm syrup and topped with blueberries.

Kim on 2024-07-31 (5 stars): I was looking for a way to make the chocolate pancake mix better and stumbled across this recipe. I used the double chocolate flapjack mix, 3/4 cup milk, 1 egg, and apple sauce instead of banana because that's all I had. I omitted the extra spices due to mine being chocolate and my kid loves them! I have made tried many chocolate pancake mixes for my kid and she hasn't been a huge fan of any until this one. So thank you for this recipe!
