




Tangy and creamy lime bars are dusted with powdered sugar for a delicious and easy dessert bar perfect for picnics or afternoon tea.

Lime bars
- Preheat oven to 350 degrees F. Prepare an 8″ by 8″ square pan by lining it with parchment paper or greasing it well.
- Cream the butter and powdered sugar together until light and fluffy in a stand mixer or with a hand mixer. Add the flour and salt and mix just until combined.
- Press or pat dough into bottom of the prepared pan.
- Bake at 350* for 20 minutes or until barely golden.
- While crust is baking, prepare the filling
- In the same mixing bowl you made the crust, (no need to clean it!) mix sugar, flour, baking powder, eggs and 1/2 cup lime juice.
- Pour onto partially baked crust and return to oven for an additional 20-25 minutes, or until a toothpick inserted in the middle comes out clean, and center has a slight jiggle.
- The bars will continue to set after removing from oven. Cool completely. Cut into squares and dust with powdered sugar just before serving.
