Ingredients
4-5 pounds Pork Shoulder (cut into chunks)
5 large Yellow/Brown Onion (sliced 1/2 inch thick)
1.25 cups Seville Orange Juice (freshly squeezed)
or
1/2 cup Orange Juice + 3/4 cup Lime Juice (freshly squeezed)
2-3 Bulbs/(1/2cup) Fresh Garlic (peeled and minced)
3 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Dried Oregano
1.5 Tablespoons Kosher Salt
2 teaspoons Ground Cumin
1/2 teaspoon Freshly Ground Black Pepper
1/4 teaspoon Crushed Red Pepper Flakes

Steps
Whisk together Mojo Ingredients.
Cut Pork into Chunks and trim away fat.
Add Pork Chunks and Mojo into a container or heavy duty freezer bag and refrigerated for two hours or up to overnight.
When ready to cook, add Pork and Marinade to Pressure Cooker cooking pot.
Slice Onions into 1/2 inch slices; don't pull apart the slices.
Place Onions on top of Pork.
Lock on Lid and close Pressure Valve. Cook at High Pressure for 4 minutes.
When Beep sounds, wait 15 minutes and then release the rest of the pressure.

Jason on 2021-03-16 (5 stars): We almost always use the pressure cooker for our pork in these kinds of recipes because it gives a much better flavor than instant pot or let's say an air fryer, if you'd wanna try that. But either way, this tastes great!
Pedro on 2020-01-27 (5 stars): Made this recipe on the weekend. I must admit that I was not convinced that 4 minutes would give good results with pork shoulder meat. I marinated the meat overnight with orange and lime juice as suggested and it was sooo good and sooo tender! I added some Robin Hood Easy Blend Flour to the sauce before serving to thicken the sauce. Definitely one of my best Instant Pot pork recipe. Thanks for sharing!
The Coasties on 2019-04-26 (5 stars): This is very tasty. We spice it up as we enjoy very spicy foods. A little Chipotle in Adobo sauce found at the market is easy to blend in a food processor, and add a tablespoon or two. Wow!

Could I pan fry it first ie brown it or would it even matter after coming out if the pressure cooker. And I do understand why it would be 4 mins cause they are in chunks. I really hope it tastes just like in the restaurants in Miami that I'm used to. Thanks for your response in advance
