1/2 cup pimento stuffed green olives (halved.)

10 large fresh basil leaves (shredded.)

Steps
Whisk the dressing ingredients together and taste to adjust any of them to suit you. Add more vinegar if you want a tangier flavor. Set aside.
Put the beans in a large salad bowl. Add the rest of the ingredients and toss with enough dressing to coat everything but not drown the salad.
Chill the salad thoroughly before serving. The salad will keep, well covered, for several days in the refrigerator. Note: if making this bean salad ahead of time I like to leave out the tomatoes until you are ready to serve. Tomatoes tend to get mushy in the refrigerator.

Xenia on 2026-03-01 (5 stars): I could eat this every single day! Talk about a party in my mouth! I made this just as written, except for doubling the multi color bell peppers and not quite as much cucumber. I think the fresh basil also really helps make it! I took it to a pot luck and it was a big hit! Ive realized especially at pot lucks, people “eat with their eyes,” and this colorful dish burst with visual eye appeal. Fortunately, I had one serving left after the pot luck to enjoy all by myself a couple days later, and yes the tomatoes were ok, and while the basil had wilted past company beautiful, it still tasted amazing! Definitely a 5 star!
Janie on 2026-02-25 (5 stars): So good!!! This bean salad is delicious and good for you!!! I’ll be making this on repeat!

Maria on 2026-01-03 (5 stars): This salad is AMAZING!! I’ve made it twice this week already. It’s so refreshing, and I feel so good eating it (after too much junk food over the holidays). I didn’t have red wine vinegar or the peppadews, so I used balsamic vinegar and pepperoncini. 10/10 would HIGHLY recommend! I’m bringing a big bowl of it to a party tonight, but I really just wanna stay home and eat it all by myself 😂
Patricia Watson on 2025-08-06 (5 stars): I’ve made this for two different group meals in the last year. It was extremely tasty, stored well after I made it in advance, and was well liked by everyone
