  1. If your dates are dry or firm, place them in a bowl and cover with hot water. Let sit for 10-20 minutes to soften.
  2. Drain the dates, keeping the soaking water. Add dates to blender or food processor.
  3. Add 1/2 cup warm water (use the soaking water)
  4. Blend until smooth. You will have to stop and scrape down the sides several times. Add additional water, 1 tablespoon at a time, until you reach your desired consistency. You might use up to 6 additional tablespoons.
  5. Transfer to an airtight container and store in the refrigerator for up to 2 weeks.
