1 cup brown or green lentils, picked over and rinsed
2 tablespoons fresh lemon juice, (from 1 lemon)
5 ounces baby spinach
Freshly grated Parmesan cheese
Fresh flat-leaf parsley, minced

Steps
Heat the oil in a large pot over medium heat. Once the oil is glistening, add the onion, carrots, and celery, and cook, stirring occasionally, until the onion is soft and translucent, about 8 minutes. Stir in the garlic and cook, stirring until fragrant, about 1 minute more. Stir in the cumin, curry powder, thyme, salt, and pepper. Cook, stirring, for 30 seconds until fragrant.
Add the tomatoes and stock and bring to a boil over high heat. Stir in the lentils and reduce the heat to medium-low. Simmer, stirring occasionally, until the lentils are tender, 20 to 25 minutes.
Transfer ⅓ of the soup to the base of a blender, let cool briefly, blend until smooth, then return the soup to the pot. (Alternatively, use an immersion blender to blend the soup directly in the pot until thick; it should have some texture to it.)
Stir in the lemon juice and spinach, and cook, until the spinach is wilted, 3 to 5 minutes. Adjust the seasoning and lemon juice to taste.
Ladle the soup into bowls and top with the Parmesan, parsley, and red pepper flakes, if desired. Serve with crusty bread on the side, if using.
