  1. Heat the olive oil in a large lidded pot or Dutch oven over medium heat. Once the oil is glistening, add the diced onion and cook, stirring, until softened and golden, 5 to 6 minutes. Add the chickpeas and bring to a boil. Reduce the heat to low and simmer, partially covered, until the mixture thickens and flavors meld, 15 to 20 minutes. Stir in the spinach and cook until wilted, about 2 minutes. Remove from heat and stir in cilantro and lemon juice. Taste and adjust seasoning.
  3. Serve hot with a dollop of Greek yogurt and a sprinkle of cilantro.
