Add all the ingredients to a jar / glass big enough for an immersion blender*
Blend, then taste and adjust for seasoning. Refrigerate for 4 hours - overnight to firm up.
Use in sandwiches, dips, dressings, any where you would use regular mayo!
*Food Processor / Blender
- If using a regular blender or food processor, add all ingredients except the oil (if using) and blend until smooth. Slowly add in oil and blend until emulsified.

David on 2026-05-24 (5 stars): Dude, made this mayo and love it. So easy and inexpensive. I won't buy mayo because I steer clear of oils and this is perfect. For the salt I used a 1/4 teaspoon sea salt and a 1/4 teaspoon kala namak and put in 1/2 teaspoon garlic powder. Thanks for yet another awesome recipe!

However, this mayo recipe is so good and so guilt free, and I'm making it so often, that I broke down and bought an immersion blender! The immersion blender is so much easier because of the easy cleanup since you make it and store it in the same jar and the immersion blender is WAY EASIER to clean than the food processor or blender.
Thanks so much for this amazing recipe! I didn't even know about extra firm silken tofu. For some reason, my Whole Foods didn't have it so I had to order it online and then pick it up at Whole Foods lol.
