A very tasty wrap with intense flavours. Allow time for the tofu to marinate. (Adapted from a recipe whose original I could never find to credit.)

Ingredients
4 tbsp lime juice
1 tbsp olive oil
8 oz extra-firm tofu, drained, patted dry, and crumbled
1/4 cup red onion, diced
1/3 cup fresh cilantro, chopped
1 clove garlic, minced
salt and pepper to taste
4 flour tortillas, 7" or 8"
2 cups lettuce, thinly sliced
1 cup salsa

Whisk 3 tablespoons (45 mL) lime juice with oil in a medium bowl. Add tofu, onion, cilantro, and garlic. Toss to combine. Add salt and pepper to taste. Stir again and let sit for 20-30 minutes to marinate.
Meanwhile, preheat oven to 350F (175C). After tofu has marinated for about 10 minutes, wrap tortillas in foil and heat in the oven for about 8-10 minutes. You want them warm but not crispy.
Toss lettuce with 1 tbsp (15 mL) lime juice.When tofu is done marinating, lay out each tortilla on a plate. Line about ¼ of the lettuce down the centre of the tortilla. Top with about ¼ of the tofu mixture and salsa to taste.
Roll up each tortilla and serve with remaining salsa on the side.
