  1. Pat chuck roast dry, put a little drizzle of avocado or olive oil on it and rub it all over with your clean hands.
  2. Season well on all sides with kosher salt, black pepper, garlic powder and onion powder. Allow the roast to sit on the counter to take some of the chill off for 30 minutes.
  3. Place a little oil in the bottom of your pan / Dutch oven.
  4. Slice your onions into 1/2 inch thick slices or so, season with S&P and place them into the pan. Set chuck roast atop the slices.
  5. Preheat oven to 325, place lid on your Dutch oven / roasting pan (or cover pan tightly with foil). and roast for 2.5-3 hours (depends on weight and thickness of meat).
  6. You will know its done when a fork can easily shred the meat.
  7. Swirl meat into any juices and the onions. Taste and season a little more if necessary.
