  1. Preheat the oven to 300 degrees and line a baking sheet with parchment paper.
  2. In a small bowl, whisk the egg white and water until very foamy.
  3. Place the nuts in a large bowl and toss with the egg white.
  4. In another bowl, add the sugars, spice and salt and mix to combine.
  5. Add the sugars to the nuts and toss until evenly coated.
  6. Spread the nuts out on the baking sheet and bake for 25-30 minutes.
  7. Remove from the oven and allow to cool for 2-24 hours in order to crisp up.
  8. Store in airtight containers or bags.
