1/4 tsp Cayenne Pepper
2 (15-ounce) Cans Chickpeas (Drained, or 3 cups cooked chickpeas)
14 ounces Canned Chopped Tomatoes ((1 can))
14 ounces Canned Coconut Milk ((400ml) Full Fat, Unsweetened)
1 Tbsp Coconut Sugar (or Light Brown Sugar)
Sea Salt and Black Pepper (To Taste)

Add the olive oil to a pot along with the chopped onions, crushed garlic, garam masala, cumin, ground coriander, turmeric and cayenne pepper and sauté until the onions are softened.
Add the chickpeas, chopped tomato and coconut milk and bring to a simmer. Let it simmer for around 10 minutes until the flavors are blended.
Add coconut sugar and mix in. Add sea salt and black pepper to taste.
Serve over basmati rice or cauliflower rice with some fresh cilantro.

John Wollner on 2025-03-07 (3 stars): I actually did not make it. That’s because it called for coconut milk. I realize that’s vegan but so high in saturated fats!! Is there an alternative plant based milk that can be used and is more healthy?
That’s the problem with most curries; they all call for coconut milk.

I usually add a lot of extra seasoning to recipes because I love flavourful foods. I didn’t really add much extra to this. It was basically perfect as listed. (Although I did triple the garlic and add a teeny bit extra seasoning lol). 10/10! I wrote it into my personal recipe book for my favourites or my creations.
