Ingredients
1/4 cup butter, (2 ounces)
1 to 2 pounds chicken of the woods mushrooms, (cut into chunks)
Salt
1 cup white wine, (or 1/2 cup brandy or bourbon)
1 teaspoon dried thyme, (or 2 teaspoons fresh)
1/4 cup heavy cream ((optional))
black pepper to taste

Melt the butter in a pan over medium-high heat. Set the mushrooms in the pan close to each other, but not touching. Brown them well on both sides, turning occasionally. You might need to do this in batches. Salt them as they cook.
Pour in the wine and use a wooden spoon to scrape up any browned bits. Add the thyme and boil this down until the wine is almost gone, turning the mushrooms once during this process.
If you are using the heavy cream, add it now and the moment it begins to bubble, turn off the heat and swirl everything around to make a sauce. Even if you're not using the cream, grind some black pepper over everything and serve.
