2 Potatoes, diced into cubes (about 2 cups) – I used 5 Medium Red Potatoes
1 tsp Kosher Salt
1/4 tsp Pepper
Sour Cream, optional*

In a large skillet over medium high heat brown chorizo sausage, breaking up with a wooden spoon or spatula as it cooks.
When chorizo is cooked through, about 5-7 minutes, add in the onion and bell peppers. Cook until onion and bell pepper has softened, about 7-10 minutes.
Add in the potatoes to the skillet, sprinkle with salt, and pepper.
Continue to cook hash, stirring frequently, for about 20 Minutes, or until the potatoes are softened. Serve immediately.
*optional* Serve with sour cream if desired

Contrariwise2 on 2023-09-10 (5 stars): I followed the recipe exactly and it was SO GOOD. I also added a couple of eggs-over-easy. My husband loved it and wants me to make it part of our regular rotation. Also wants me to make it for Christmas Brush when our relatives come over.
Made it a couple weeks ago and I'm making it again tonight. This time I'm going to add a couple of diced jalapeños for a little extra kick.
