Steps

  1. Cut bell pepper, eggplant and onion.
  2. Heat oil in a pan, add mustard seeds. Add chopped vegetables, salt and mix well.
  3. Set lid, cook for a couple of minutes on medium flame, stir and put the lid back on. Repeat this a few times till the veggies are cooked.
  4. Add chili powder (or cayenne pepper), mix well.
  5. Transfer to a serving dish and serve hot.
